Transformation Thursday

I've lost 68 lbs since 2011...of course I was pregnant for 10.5 months, but I'm back onto my eating clean and workout routine! I'm so excited to hit and maintain my goal weight- I'm currently 30 lbs from

Ugh- I can't believe I did this to myself-pic on the left was my birthday in Vegas - April 2011 & the one on the left was in May 2011 ...

And this is me October 2013...2.5 weeks after I had our son, 6 lbs under what I weighed when I got pregnant : )

Triple Threat: weekend re cap, so what Wednesday & a new recipe :)

Weekend re-cap:

The weekend was so nice, pretty out with a chill, I love fall! We hung out with great friends Saturday & Sunday we hung pictures, ordered a canvas pic of a wedding picture we've been wanting to do for 3 months & my husband officially put handles on our island - to open the doors he rigged them with blue tape- so the handles are AMAZING!!!

So what Wednesday..

So what if.......

-I love saving change ( like dimes, nickels, quarters!) I save everything. In fact, we swam with dolphins in Florida one year with the change I'd saved : )
- sometimes I leave babyD in his PJs if were not going anywhere that day
-I don't produce enough breast milk, so we feed a couple feelings with formula 
- I'm dieting and don't ever really care for sweets ( I'm a chip & cheese girl) but I bake anyways because I truly love to cook and bake
-my wedding band isn't traditional at's an eternity band full of hearts, so it doesn't fit flush against my engagement's what I chose : )
-I never ate tomatoes until I was 23 & now I LOVE THEM!!!!

Chicken recipe:

I made this the other night with a sautéed mushroom & garlic white sauce that was so good my husband said "this would make asphalt taste good" truly made my night!!

You will need 
1 package thin sliced breast filets

For the sauce:( I cheated a bit bc we had a fussy baby)
1 packet country gravy mix ( the entire packet is 40 cals)
1 package white mushrooms
4 cloves garlic
Garlic powder

For the chicken: 
We put some evoo in a skillet and for about 10-12 minutes until the cutlets were browned
Then we set the oven to 425 and baked them for 35-37 minutes

For the sauce: 
In a skillet I put minced garlic, evoo and sliced mushrooms. I sautéed them
Then in a sauce pan I followed the directions on the back of the packet, boiled 2 cups of water then added packet mix, after that was thick, I added the mushrooms and the garlic

I served all of this over brown rice & my husband wanted biscuits so I baked 2 for him, while the chicken baked, as well! It was delicious! I can't wait to make it again!

5 on Friday!

One. My husband is REALLY amazing about letting me have 'me' time after I've watched babyD all day while he's at work! I WILL make this blanket this weekend : )

Two. It's the holiday season, therefore this skinny vanilla latte was worth ALL 110 cals. I love love love this time of year!

Three. This is mine and my husbands bible right now! We loved what to expect when your expecting & the feeling is absolutely mutual with this book as first time parents.

Four. I'm hoping to get the OK on working out at my 6 week post op appointment next Tuesday! I've been counting cals and doing approved walks, but the skinny girl in me is SCREAMING for a really really good workout! Ahhh soon enough. I'm far from a patient person...

Five. I love sock weather!! I love silly socks even more! I always raid the clearance sock section at Target! We haven't paid more than 1.05$ for a pair of socks for me for about two years now! : )

Weekend re-cap & low cal ranch dressing

Our weekend was amazing! Filled with so much fun!

Friday we had a double date sushi dinner with some great friends ( and our sweet kiddos in tow!!) we LOVE LOVE sushi!! We all walked to dinner and back - about 2.5 miles round trip! :)

Saturday: we decided to have a mini/early date night , we had a gift card we'd been sitting on since the beginning of the year for just the occasion! So we dropped our son off with Grandma & grandpa for bout two hours, it was so nice!! 

Sunday walked  with our friends and each of our babies to a place for breakfast burritos and then to the local brewery ( that happily allows kids, dogs, birds :)) had a great time! Then my aunt and my grams were in town, we decided to cook the first dinner ever at our house for them!! We cooked squash OF COURSE it was so delicious and so so so much fun!!
Our version of caprese salad - we add honey and avocado!
~ just love our wedding pattern!

I don't know about you! But I not only LOVE me a good salad, I LOVE ranch dressing ( kens ranch dressing is absolutely delicious -NOT so great when you're trying to lose weight!!) SO I make my own very low calorie ranch & always keep it on hand!!

You will need:
1 packet of ranch dressing mix
1 package of plain yogurt ( we use Chobani or Fage)
Milk ( we usually use 2%- the whole milk was the only option at the store we stopped at over the weekend)

To make:
1 cup plain yogurt
1 cup milk
1 packet of ranch seasoning mix
Put it all into a jar, we re use old pasta sauce jars -for the lazy nights we don't make it from scratch- & shake it up! The entire jar is 270 cals, while an entire bottle of kens ranch is about 433 cals : ) 

The left over yogurt is also a great healthy alternative to use in gravy dishes and what not, to make a sauce thicker : )

Healthy , easy butternut squash recipe

This was my first time making a butternut squash & I was very pleased at how easy & delicious it turned out!!

For the squash you will need:
1 butternut squash
1/3 cup extra virgin olive oil
Salt to taste
Pepper to taste

For the sauce you will need:
1 cup fresh cherry tomatoes
4 cloves garlic ( minced)
A few sprigs of basil ( chopped)
1/2 white onion (chopped)
1 can hunts tomato sauce
Salt to taste
Garlic powder to taste
Pepper to taste

Heat oven to 425
Then cut squash in 1/2. Cut out the seeds on both halves. Rub some Extra Virgin Olive oil into where the seeds were and on both halves,, add some salt and some pepper. Cover a baking sheet with tin foil, place both halves on it and bake at 425 for 1 hour and 10 minutes.

While squash is baking ( I waited until about 30 minutes in, because I took that as an opportunity to feed our kiddo, load dishwasher , etc.) chop up 1/2 of a white onion and mince 4 cloves of garlic, heat it in a medium size sauce pan until the onion is translucent ( somewhat see through). Cut the cherry tomatoes into thirds, add them, add salt, garlic powder and pepper, cook for about 20-25 minutes, then add chopped basil and 1 can of tomato sauce ( this will thicken the sauce) let simmer for another 10-15 minutes.

After 1 hour and 10 minutes, remove squash from oven. Remove the skin & cut squash into squared pieces, both halves. 

Serve with the pasta sauce on top.

(My husband LOVES Parmesan cheese & added it as well :) ) 

These two married very well together AND it's all very healthy! A butternut squash is a 'good starch', an anti inflammatory and full of antioxidants, and the pasta sauce. Is full of antioxidants as well : ). I really enjoy foods of fall!

I found this "easy" because while the squash was baking I could get things around the house done and wasn't tied to the kitchen the entire time.

So what Wednesday and Q&A :)

So What If.....

~I drink 1-2 packets of these every single day

~I STILL make a Chrsitmas list ( my mom ALWAYS asked me for one : ) )

~I'd rather workout to DVDs, my elliptical at home & go on walks than spend the $ joining a gym

~ I can't stand watching football on tv, but LOVE being AT football games in person

OK! A few friends emailed questions in, I didn't tag anyone because some people like to stay pretty private now a days: )

1. Does your husband diet with you? Or do you make separate meals? If he doesn't , I imagine it could be hard. My husband dieted with me at FIRST, he lost about 25 lbs and was back at the weight he met me & has maintained that ever since, so he doesn't diet with me now. I cook healthy meals, & usually if he wants to tweak them or have mashed potatoes instead, we have 'instant' potatoes & he adds what he wants. We are opposites as far as our tastes: he would rather eat ice downfall is chips and cheese, so he can still have his indulgences around the house & it doesn't phase me:)

2. You two seemed FOR kids, but not wanting kids anytime soon, a year ago, what happened? Well.....we got pregnant! And, we were more ready to be parents than we originally thought! My moms passing really hit home with us and put into perspective that life waits for NO ONE, do what you want, what makes you happy& do it NOW : )

3. You are an inspiration, always so upbeat about almost everything, when something bad happens you never seem to be sad for long and can see the good in that situation also, you keep a smile going even though you lost your mom, whom you were very close to this year, how do you do it? Wow! Thank you, I've never really seen myself as an 'inspiration' : ). I am a lot like my mom: as in she allowed herself time to mourn ( mourn her divorce, my sisters death, whatever the situation) and cry if she needed to, but always ended a dad conversation, or time with a big big smile & a positive outlook towards the future. I cry, I cry a LOT, but I make it a point to count the big and small blessings I have, rather than being bitter and mad at what I do not have (though sometimes it's OK to be angry that my mom, or someone you love isn't here, let yourself feel that). I do know I would NOT have made it through this year without my loving husband and my supportive family!

4. What do you do to workout? Before baby, I'd try to do 3 work outs a day, for at least 4 days a week. Is start the morning off on the elliptical, do an afternoon workout DVD & take a 1-2 mile very fast paced walk with my husband in the evenings

5. You and your man are so cute together, really made for each other. How did you meet? When did you know he was the one for you? Thank you! Haha believe it or not we met on MySpace, in 2007! We were both in similar situations, both just getting out of another relationship, so we told each other that we didn't want anything serious, just fun. So for quite a while, we only saw each other a few days a week, usually weekends , but the days we weren't together we were either texting or calling each other the entire time. When we decided to give our relationship what it deserved and more than just having fun' it moved really quickly...after 5 months I had a key to his place & after 13 months we moved to Santa Barbara together- I knew he was 'the one' 8 or 9 months in : )

6. I try to eat right and diet, but I am so busy I don't always have time to plan ahead for meals, or the money to buy groceries multiple times a week, just for food for me.What do you normally eat when your dieting? I eat a lot of lean ground turkey, tofu. I make meals with a lot of garlic ( which helps with milk production , as I'm breast feeding now ). I get bored easy with meals, so I'm always looking up new healthy recipes on Pinterest. I make a lot of big dinner salads & make my own ranch dressing at home, so I know what ingredients go into it. BUT I have my lazy weeks or months too and keep 5 lean cuisines on hand for that! For the most part I try to eat 'clean' but hey, were all human : )

7. How did you guys come up with your sons name? He has two middle names? Or is it hyphenated? Welllll we were in Florida for my husbands 30th birthday 3 years ago, those who know me, know I'm a very blunt person, thus I usually talk about anything and everything that comes to mind. We were not engaged but constantly talked about our futures together, one night watching the sunset we spent hours talking about what we thought our kids would look like, the parents we wanted to be and such. We picked out a name for a boy & a girl, on that trip. Jayce was a cool name we'd heard before and both LOVED it : )...

8. You have mentioned having a fit pregnancy, what do you mean? You've already lost all your pregnancy weight!? How? It means, I didn't want to gorge myself out and eat everything in sight using my pregnancy as an excuse. I absolutely ate more than I ever did, I just reached for healthy foods and healthy snacks. I only gave into 2 cravings: chocolate ( I had two , sometimes 3 mini Hershey bars a day, not everyday & I wanted a piece of ice cream cake, had 6 bites and threw it up!) I also walked all over town for an hour or two a day while pregnant. I am not sure how I managed in a month to not only lose all my pregnancy weight but come in under, seeing as I was laying in the hospital for 6 days at first: Breast feeding helps and having a high metabolism sure helps right now too : )
